We first brewed Very Seldom Naughty back in 2016.
To make this beer we first barrel-age our sour wheat beer that is fermented with our mixed culture of wild yeast and bacteria. For the first few releases we added white wine lees from a rotating selection of TX wineries that use exclusively TX grown fruit directly to the barrel.
Starting with Blend 6 we've been using whole pomace as an annual release each Fall.
Our guided vertical tasting includes 9 bottles of VSN dating back to the Blend1 from July2016.
You'll get 9 4oz pours of each vintage and Kelly will explain how we crafted that release, how we sourced the lees and how the beer has evolved in the bottle over time.
